After interviewing him for his iconic borsch recipe last year, I was thrilled to present him with "Portraits of Ukraine" featuring his story.
"Portraits of Ukraine A Nation at War" brings modern Ukraine to life through its history, culture, and people. It has 10 comprehensive chapters and 300 evocative images that counter Kremlin propaganda with the truth about this vibrant democracy.
Ievgen has truly transformed Ukrainian cuisine's global image—from securing United Nations Educational, Scientific, and Cultural Organization (UNESCO) recognition for borsch to turning his Kyiv restaurant into a frontline canteen after the invasion began.
To my friends in the US, borsch is a sour soup made with meat stock, vegetables, and seasonings common in Eastern Europe and Northern Asia. In English, the word borsch is most often associated with the soup's variant of Ukrainian origin, which is made with red beetroots as one of the main ingredients, which gives the dish its distinctive red color.
